A good recipe for peak zucchini season

Zucchini pancakes might just be the most underrated zucchini recipe for summer’s most underrated vegetable. Everyone loves them, they’re super easy to make, and they turn what some might consider a stodgy vegetable into a fun dish.

A quick note on buying zucchini: I like to look for the smallest zucchini and yellow squash that I can find. They don’t necessarily have to be designated as the “baby” variety, but something under six inches long and an inch or so in diameter is ideal; it will have better flavor and smaller, less cottony seeds. If zucchini is tender enough, you can even eat the stem. You may also come across the flying-saucer-shaped pattypan squash, which is a bit trickier to cut up, but don’t be shy about buying them.
