Caribbean curry powders differ from Indian ones by the use of allspice and nutmeg, thus forming a perfect marriage between the two cuisines. This is my version. —Lelani Lewis

Lelani Lewis’s Caribbean Curry Powder

Makes approximately 3 1/2 ounces (100 grams) 1x

Instructions

  1. Toast all whole spices in a dry frying pan over medium heat. Once the spices have filled the air with their fragrance, add the ground spices and mix well.
  2. Grind everything finely in a coffee or spice grinder or mortar and pestle.
  3. Store in an airtight container or jar. Discard if it no longer gives off any aroma, typically after about 3 months.
