Oatmeal-Something Cookies

One of the advantages of oatmeal cookies is their flexibility: They’re delicious both plain and loaded with all sorts of goodies from dried fruit to nuts. Toss in raisins, dried cranberries or cherries, chocolate chunks, coconut, crumbled shredded wheat cereal, even leftover cooked whole grains—the dough can handle up to 1 1/2 cups total.

Oatmeal-Something Cookies

Ingredients

  • 2 cups rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 12 tablespoon (1 1/2 sticks) butter, softened
  • 1/2 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • Up to 1 1/2 cups additions (see headnote; optional)

Instructions

  1. Heat the oven to 375°F.
  2. Whisk the oats, flour, baking soda, cinnamon, and salt together in a medium bowl.
  3. Use an electric mixer to cream the butter and granulated and brown sugars in a large bowl until light and fluffy. Add the eggs one at a time, beating after each addition, until just combined, then add the vanilla and mix to combine. Gradually add the dry ingredients and the milk to the creamed mixture, mixing on low speed. If you’re adding anything else, stir it in now by hand.
  4. Drop tablespoon-size mounds of dough onto ungreased baking sheets about 2 inches apart. Bake for 12 to 15 minutes, until lightly browned. Cool for about 2 minutes on the pans before transferring the cookies to wire racks to finish cooling. These will keep in a covered container for a day or 2.

Lacy Oatmeal Cookies
No flour—and no additions in these, please: Melt the butter and combine it with the sugars, oats, and salt; beat in the eggs. Omit the flour, baking powder, milk, and vanilla; add the cinnamon if you like. Bake at 350°F on greased baking sheets for 8 to 10 minutes; let rest for a minute before transferring to wire racks with a thin-bladed spatula to finish cooling.
