The humble butter cookie, enhanced by the warm, caramel flavors of jaggery. Jaggery is an unrefined sugar from India, made from boiling sugarcane juice or date palm sap until it crystallizes. The complex flavors shine in this simple cookie with a touch of ginger and cinnamon. Perfect for dunking into coffee or tea.
