Week 1: Speed
Mornings move fast–but there’s always time for a tasty breakfast. This week, Kate, Holly, and Mikee have just 90 seconds and four ingredients or less to create a breakfast rice cake that’s quick, easy and delicious. Kate's Recipe: Lightly Salted Lundberg Rice Cake, peaches, crème fraîche, honey & sea salt.
Mikee's Recipe: Lightly Salted Lundberg Rice Cake, avocado, balsamic glaze, Everything Bagel seasoning & fresh radishes.
Holly's Recipe: Honey Nut Lundberg Rice Cake, peaches, crème fraîche, honey & sea salt.
Week 2: Healthy
Finding a breakfast that is flavorful AND truly healthy—full of protein and fiber, but without the extra calories—can be a challenge. This week, Kate, Holly, and Mikee are pushing their skills to the limit to create a rice cake breakfast that’s big on flavor but light on calories. The rules? Less than 300 calories. At least 10g of protein. Smart, satisfying, and seriously healthy.
Kate's Recipe: Lightly Salted Lundberg rice cake, eggs, soy sauce, sesame oil, miso paste, mayonnaise, and furikake.
Holly's Recipe: Lightly Salted Lundberg rice cake, whipped cottage cheese, turkey bacon, sliced tomato, and salt & pepper.
Mikee's Recipe: Lightly Salted Lundberg rice cake, low-fat cream cheese, smoked salmon, red onion, capers, salt & pepper, dill, and lemon.
Week 3: Deluxe
Our third challenge: A Deluxe Breakfast. Mornings move pretty fast—if you don't stop and look around once in a while, you could miss your rice cake. This week, Holly, Kate, and Mikee have to create a decadent, deluxe breakfast rice cake.
Kate's Recipe: Cinnamon Toast Lundberg Rice Cake, almond butter, mashed up dates with salted almonds, coconut flakes & honey.
Mikee's Recipe: Cinnamon Toast Lundberg Rice Cake, ham, mustard, mayo, gruyère cheese & eggs.
Holly's Recipe: Lightly Salted Lundberg Rice Cake, cheesy scrambled eggs, soyrizo, sour cream, green onions & homemade hot sauce.
Week 4: Allergies
It’s week four of the How to Cook Everything Rice Cakes competition. This week’s challenge? An allergen-friendly snack—free of peanuts, tree nuts, fish, dairy, eggs, gluten and sesame! Which rice cake are you eating—Holly’s, Kate’s, or Mikee’s?
Mikee's Recipe: Salt-free Lundberg rice cake, vegan mayo, salami, cherry tomatoes, basil, and evoo.
Holly's Recipe: Lightly Salted Lundberg rice cake, coconut milk chia pudding (coconut milk, chia seeds, maple syrup), and mango.
Kate's Recipe: Lightly Salted Lundberg rice cake with chopped green tomato, avocado, cubanelle and jalapeño peppers, Castelvetrano olives, green onion, cilantro, lime, olive oil, and salt & pepper.
Week 5: Kids
It's here ... the FINAL week of the How to Cook Everything Rice Cakes competition. This week it's Holden's Honey Nut Rice Cake Sundae versus Mark's Rice Cake Pizza! Which rice cake are you eating?
Holden's Recipe: Honey Nut Lundberg Rice Cake, chocolate ice cream, whipped cream, chocolate sauce, sprinkles, and strawberries.
