Broil It

Go on and make use of this underutilized—and underrrated—oven setting.

The most valuable secret weapon in your kitchen just might be your broiler, which can be thought of as an upside-down indoor grill—a tool that is as exciting as a grill and far easier to use. Like grilling, broiling provides direct heat for searing food; like grilling, it can brown quickly and even char. And most recipes that call for grilling or broiling offer the other as an alternative.

Broiling spreads heat over a large area, allowing you to sear big batches of food at once.
