I knew from some off-road experimenting that I could make a double batch of Bittman Bread and divide it into enough for my little on-farm market table. A whole public market, though? When should I start? How much starter would I need? How much should I make? I had to figure out what was possible.

Whole Wheat Dried Fruit Scones, Bittman-ized

You can use any combo of flavors you like—blueberry-lavender, apricot-almond, cherry-pecan, for example. I had some organic dried cranberries that needed to be used up. You can also make these a day or two before you’d like to eat them so you can let the sourdough work its magic for 24 to 72 hours as described in note below.
