Panela has a richer, more complex flavor than brown sugar because, being unrefined, it retains its molasses. Generally, it’s worth having some around.

Ingredients
- 150 grams panela
- Juice of 2 or 3 limes
- 6 cups of water
- Mint or yerba buena (another member of the mint family)
Instructions
- Chop the panela, bring the water to a simmer on the stove, add the panela and stir until dissolved.
- If serving hot: Turn off the heat, add the leaves and lime juice, and let steep for a few minutes. If serving cold: Let the mixture cool, stir in lime juice, pour over ice, and garnish with herbs.
