Cherry Vanilla Smoothie

Ingredients

  • 1/2 cup unsweetened plain non-dairy milk or silken tofu (4 ounces)
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh or unsweetened frozen pitted cherries, or a little more
  • Ice as needed

Instructions

  1. Put the ingredients into a blender in the order listed, adding ice only if using fresh fruit; if you’re using frozen fruit, you probably won’t need any ice.
  2. Puree until smooth, stopping the machine once or twice to scrape down the sides. Adjust the texture with a little water or ice, or more cherries. Serve immediately.

Recipe variations

Strawberry-Balsamic Smoothie Swap 1 teaspoon balsamic vinegar for the vanilla and strawberries for the cherries.

Melon-Lime Smoothie Swap 1 tablespoon fresh lime juice for vanilla and cubed melon for the cherries. Great made with a little coconut milk (reduced-fat is fine) in place of half of the non-dairy milk. Add a pinch dried or fresh chile, if you like.

Avocado-Banana Smoothie Swap 1/2 avocado and 1/2 frozen banana for the cherries; you’ll almost certainly need more ice.
