Chopped Deli-Style Salad with Salami, Sieved Eggs, and Crushed Salt and Vinegar Chips

Sure, leftovers are great for the next day’s lunch. But what if tonight’s meal ended up as tomorrow’s supper—yet in a totally new, unexpected way? This is “Dinner Tonight, Dinner Tomorrow,” a monthly series that we hope you find as useful as we do.

Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/2 cup white wine vinegar
  • 1 tablespoon dried oregano
  • Salt and freshly cracked black pepper, to taste
  • 1 head iceberg, shredded (very thinly chopped)
  • ~12 ounces provelone, cut into small cubes
  • 6 pieces sliced salami (reserved from last night), sliced into 1/4-inch strips
  • 1/2 red onion, thinly sliced
  • 2 hard boiled eggs (leftover from last night), passed through a sieve
  • 50 grams kettle cooked salt and vinegar potato chips (leftover from last night), crushed

Instructions

  1. Whisk oil and vinegar with dried oregano, salt, and freshly cracked black pepper. Taste and adjust to your preferences. In a large mixing bowl, toss lettuce with vinaigrette until well-coated. Add provolone, salami, red onion, and sieved eggs. Toss again, transfer to serving plates, and top with crushed salt and vinegar potato chips.
