Citrus Salsa

Ingredients

  • 4 to 8 oranges; peeled, seeded, and chopped (use any kind you want about 2 cups)
  • 1 lemon or lime; peeled, seeded if necessary, and chopped
  • 1/2 white onion or 3 or 4 scallions, chopped
  • 1 teaspoon chopped garlic, or to taste
  • Chopped fresh chile (like jalapeño, Thai, or habanero), red chile flakes, or cayenne, to taste
  • 1/2 cup chopped fresh cilantro or parsley
  • Salt and pepper

Instructions

  1. Combine everything but the salt and pepper in a medium bowl. (Be sure to include the citrus juices from the cutting board.) Sprinkle with a little salt and pepper, then taste and adjust the seasoning.
  2. If possible, let the flavors develop for 15 minutes or so, but serve within a couple of hours.
