Tomato sauce is the liquid for poaching the eggs, traditionally seasoned with cumin, paprika, and cayenne. But I like to make it with all different kinds of tomato sauces, or even creamed vegetables (see the variation). Since you can add the eggs one at a time and cook them to different donenesses, it’s a great dish for pleasing everyone at the table.
