Fried Bananas with Ice Cream, Honey, and Toasted Almonds

Ingredients

  • 3 tablespoons neutral oil
  • 1/2 cup all purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 2 large eggs, whisked
  • 2 large ripe bananas (not too ripe, so they’re easy to handle), cut into thirds or quarters
  • Vanilla ice cream, for serving
  • Toasted almond slices or slivers, for garnish

Instructions

  1. Add neutral oil to a large pan over medium heat. Whisk together flour, sugar, and salt and transfer to a shallow plate or pan for dredging. Coat each piece of banana with the dry mix, then dunk it and coat it in the eggs, and return it to the dry mix until thoroughly covered. Transfer each piece of banana to the pan with oil and fry until golden, then set on a cooling rack until ready to assemble. Scoop ice cream into serving bowls and top them with fried bananas, honey, and toasted almonds.
