Ginger-Scallion Sauce

Ingredients

  • 1/4 cup chopped fresh ginger
  • 1/2 cup chopped scallions
  • 1 teaspoon chopped garlic
  • 1 teaspoon salt, or more to taste
  • 1/2 cup good-quality vegetable oil

Instructions

  1. Mix the ginger, scallions, garlic, and salt together thoroughly in a heatproof bowl.
  2. Heat the oil in a small saucepan or skillet over high heat until smoking. Carefully pour the oil over the ginger-scallion mixture and mix well. Serve hot or at room temperature. Or refrigerate for up to 3 days (bring back to room temperature before serving).

Recipe variations

Chile-Scallion Sauce
A different kind of heat means you can use this with richer foods like grilled or roasted beef and pork. Add 3 tablespoons (or to taste) of your favorite chopped fresh chile. Reduce the ginger to 1 tablespoon or omit it entirely if you’d like, and increase the garlic to 2 teaspoons.
