Granola and Muesli

Ingredients

  • 6 cups rolled oats
  • 2 cups chopped nuts (walnuts, pecans, almonds, cashews, etc.)
  • 1 cup shredded unsweetened coconut
  • 1 teaspoon ground cinnamon, or to taste
  • Pinch salt
  • 1/2 cup packed brown sugar, honey, or maple syrup, or more to taste
  • 1 cup raisins or chopped dried fruit

Instructions

  1. If you’re making granola, heat the oven to 350°F.
  2. In a large bowl, combine the oats, nuts, coconut, cinnamon, and salt. For muesli, sprinkle the oat mixture with the brown sugar; for granola, drizzle it with honey or syrup. Toss well to thoroughly distribute the sweetener. Taste and stir in a little more to make the cereal sweeter if you like. If you’re making muesli, add the raisins and you’re done.
  3. If you’re making granola, spread the mixture evenly on a rimmed baking sheet and put in the oven. Bake for 30 to 35 minutes, stirring occasionally to make sure the granola is toasting evenly. The browner it gets without burning, the crunchier the granola will be.
  4. Remove the pan from the oven and add the raisins. Cool on a rack. The pan will still be quite hot, so stir the granola once in a while until it cools to keep it from burning in spots. Spoon the granola—or muesli—into a sealed container and store in the refrigerator; it will stay fresh for a couple months.

Recipe variations

3 Ways to Vary Granola or Muesli:

  1. Use different nuts or dried fruit. I don’t combine more than one type of nut or fruit at a time because I like the flavors to be distinct, but you certainly can. Some dried fruit to try: cranberries, apricots, blueberries, pineapple, or figs.
  2. Instead of the cinnamon, try 1/4 teaspoon freshly grated nutmeg or ground allspice or 1/2 teaspoon ground cardamom or ginger.
  3. Replace the coconut with more oats, nuts, or fruit.
