Ingredients

  • 1/3 cup olive oil
  • 2 tablespoons any vinegar or lemon juice
  • Salt and pepper
  • 1 pound romaine lettuce or any other salad greens

Instructions

  1. Put 1/3 cup olive oil and 2 tablespoons vinegar in a large bowl and sprinkle with salt and pepper. Whisk with a fork to combine.
  2. Trim the lettuce and tear the leaves into bite-sized pieces (you should have about 6 cups). Add the greens to the bowl.
  3. Toss gently, lifting from the bottom to coat with dressing. Taste and adjust the seasoning; toss again. Serve right away.

Recipe variations

Dressed Cooked Vegetables.

Eat them hot, at room temperature, or chilled—as you like. If you don’t have any leftover plain cooked vegetables, make a batch of steamed vegetables. Drain well. The formula here dresses 6 cups, so do the math accordingly. Or make Vinaigrette  and drizzle or toss the vegetables with some of that.
