Grill-Roasted Garlic

Makes As much as you want

Time 1 to 1 1/4 hours, largely unattended

Ingredients

  • Whole heads garlic, however many you want
  • Good-quality olive oil

Instructions

  1. Start the coals or heat a gas grill for medium indirect cooking.
  2. Remove the loose papery outer coating from the head(s) of garlic, then use a sharp knife to cut across the top of the head to expose the cloves without cutting away too much of them. Drizzle some oil over the top so that it coats between the cloves as well as the exposed tops.
  3. Put the garlic on the indirect side of the grill, cut side up. Close the lid and cook until the garlic feels soft when you squeeze it, 45 to 60 minutes. Transfer to a plate.
  4. To use, squeeze the individual cloves from their skins. Roasted garlic will keep in the refrigerator in an airtight container for up to a week, or indefinitely in the freezer; remove the cloves from their skins before freezing.
