Mexican Chocolate Tofu Pudding

Ingredients

  • 3/4 cup simple syrup or sugar
  • 1 pound silken tofu
  • 8 ounces vegan chocolate (see below), melted
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon chili powder, or more to taste
  • Shaved chocolate for garnish (optional)

Instructions

  1. If you’re using sugar, combine it with 3/4 cup water in a small saucepan and heat until the sugar dissolves. Set aside to cool.
  2. Put the simple syrup, tofu, chocolate, vanilla, cinnamon, and chili powder in a blender and purée until completely smooth, stopping to scrape down the side if necessary. Divide the pudding among 4 to 6 ramekins and chill for at least 30 minutes before serving. If you like, use a vegetable peeler to shave some curls of chocolate on top.

Chocolate for vegans
There are several routes for the vegan chocolate lover. First, unsweetened chocolate and unsweetened cocoa powder never contain milk solids (the “butter” in “cocoa butter” has nothing to do with dairy). Second, many dark chocolates are vegan, even if they are not labeled as such. FDA rules say that dark chocolates can contain up to 12 percent milk solids, but that doesn’t mean they do. If you pick up a dark chocolate and it’s labeled “vegan,” you’re good to go. If it doesn’t, check the ingredients for milk solids or lecithin; if they are not there, the chocolate is vegan.

Recipe variations

Chocolate-Orange Tofu Pudding
Citrus adds bright flavor: Substitute 1 tablespoon grated orange zest for the vanilla, cinnamon, and chili powder.

Chocolate-Raspberry Tofu Pudding
Decrease the simple syrup to 1/2 cup or dissolve 1/2 cup sugar in 1/2 cup water. If you don’t mind seeds, blend 1/2 cup fresh or thawed frozen raspberries with the other ingredients; otherwise, purée and strain 1 cup raspberries to make about 1/2 cup purée and add that to the blender. Omit the vanilla, cinnamon, and chili powder.

Peanut Butter-Banana Tofu Pudding
Use 1/4 cup simple syrup or dissolve 1/4 cup sugar in 1/4 cup water. Blend it with the tofu, vanilla, 2 ripe bananas, and 1/2 cup creamy peanut butter. Omit the cinnamon and chili powder.
