Rooibos-Poached Apples with Salted Maple Whipped Cream and Toasted Walnuts

Ingredients

  • Juice of 1 1/2 lemons
  • 5 Honeycrisp apples, peeled, cored, and halved
  • 6 cups water
  • 6 Rooibos tea bags (or, alternatively, chai)
  • 2 cinnamon sticks
  • 1 cup honey
  • 1 cup heavy cream
  • 2 teaspoons Salt
  • 3 tablespoons Maple syrup
  • Toasted walnuts, chopped, for garnish

Instructions

  1. In a large bowl, pour lemon juice over apples and gently toss to ensure they’re all coated, to avoid browning. Add water, tea bags, cinnamon sticks, and honey to a large pot and bring to a boil. After a few minutes, remove the tea bags and reduce the heat to medium. Add apples, cover the pot, and cook for 10-12 minutes. While you wait, prepare the salted maple whipped cream: In a stand mixer or using a hand mixer, beat heavy cream until thickened. Add salt and maple syrup and beat until the whipped cream reaches stiff peaks. When the apples are tender, transfer them to small bowls, face up, and top with whipped cream and toasted walnuts.
