Peel potatoes and cut into 1/2-inch chunks, then put potatoes into a pot, add a teaspoon of salt, cover over with water by an inch, and bring to a boil.
Cook until potatoes are easily pierced with a fork, 10-15 minutes, then drain and cover.
In a food processor, grind garlic with nuts, vinegar or juice, and oil to form a glossy paste. Add garlic mixture to potatoes, and mash thoroughly. (Or, for lighter texture, pass potatoes through a food mill or ricer first.) Add salt as needed, and serve with toasted pita bread.
