Yogurt-Glazed Grilled Paneer (Paneer Tikka)

Ingredients

  • 3/4 cup yogurt, preferable whole milk
  • 3 tablespoons mustard oil (or substitute vegetable oil)
  • 2 tablespoons ginger-garlic paste, available in Indian groceries, or 1 tablespoon chopped fresh garlic and 1 tablespoon fresh grated ginger
  • 2 teaspoons salt
  • 1/2 teaspoon turmeric
  • 1 teaspoon garam masala
  • 2 pounds paneer, cut into 1 to 1 1/2 inch cubes
  • 1 teaspoon hot chile powder (optional)

Instructions

In a large bowl, add all ingredients except cheese and whisk to combine. Add paneer cubes, and mix to combine.

Thread the paneer cubes onto skewers, letting excess yogurt drip off. On a hot grill or under a broiler, cook the skewers until their edges begin to brown, 3 to 5 minutes. Turn and cook the other sides, removing when edges are browned but not blackened.

Serve with basmati rice and herbed yogurt.
