Crisp Baby Artichokes with Lemon Aïoli

Baby artichokes are much easier to prepare than the mature globes, with the added benefit that every bite is edible. I clean them in advance earlier in the day, so they are ready to go on the grill when guests arrive. And if they discolor despite coating them with lemon juice, don’t worry—after grilling you won’t notice that at all.
