1. Tom Collins
Combine lots of ice, 1/4 cup gin, 1 1/2 tablespoons lemon juice, and 1 tablespoon simple syrup in a mixing glass and shake. Strain into a glass of ice and top with club soda. Garnish: lemon wedge.

2. French 75
Shake the same ingredients as above, only this time with slightly less gin and lemon juice; strain into an empty glass. Instead of club soda, top with Brut Champagne. Garnish: lemon twist.
