Ask a home cook how they prepare arroz con pollo (rice with chicken). Then ask another, and then a third. All three will have a different answer. All three will be correct.

I didn’t grow up with arroz con pollo as a child. But when I first moved to New York after college, it quickly became my favorite dish from my favorite local takeout places: La Taza d’Oro and Nueva Rampa. A container of arroz con pollo, a side of tostones, a cold beer or two, a cigarette afterwards—truly happy memories.
