Fried chicken is too often considered an indulgence, something for special occasions. The emotional overhead just seems so high for a simple supper for one. All that oil! The lingering smell! The sinkful of dirty dishes!

But it doesn’t have to be so. This super-simple stovetop method, inspired by katsu-style chicken and other similar dishes, nets you flavorful, juicy chicken breast with a super-crunchy exterior, and it comes together quickly. It only needs three tablespoons of vegetable oil to cook, most of which is left behind in the pan (no fat bombs here), and it requires just two bowls.
