Get ready for a fast, saucy, and versatile dish that’s just as good at room temperature as it is hot. Right now, you want to make it with fresh tomatoes and lima beans or any kind of plain-cooked, canned, or frozen beans. During fall and winter, a small can of whole tomatoes steps in. Enjoy it as shown with thick slices of toast or spoon a serving over whole grains (like farro, steel-cut oats, or millet) or brown rice. You can even toss it with pasta or noodles. Oregano and olive oil provide the finishing touch, but cilantro, basil, parsley, chives, or dill are all good options. Which begs the question: Is anything not flexible in this dish?
