Crisp-Fried Bean Sprouts

The sole purpose of today’s short-and sweet newsletter is to introduce you to a dish that likely many of you have never made or tasted: Fried Bean Sprouts. Not stir-fried. Fried fried. 

Bean sprouts never get star treatment, but turns out they take quite well to frying. All they need is a toss in some soy sauce and flour, and a few minutes in hot oil, at which point they become impossible to resist. You can eat these plain (like shoestring fries), or garnish them with peanuts, cilantro, chile and lime, which is ridiculously good. You can also eat them in lettuce wraps, or sprinkle them on salads or cold noodle dishes (like Soba Salad or Cold Fiery Noodles) for some crunch. You may never look at bean sprouts the same way again.
