The video here walks you through the butterflying process. Split, flattened, and roasted at a high temperature, a 10-pound bird will be done in about 45 minutes. Really. It will also be more evenly browned, more evenly cooked (the legs are more exposed; the wings shield the breasts), and moister than birds cooked conventionally.
Please take note: You must use a relatively small turkey. Do not plan your most important meal of the year around trying this method with a 20-pound bird. It won’t work. Second, an instant-read thermometer is helpful. And finally, if you have the giblets and neck from the bird and want to use them, rub them with melted butter or olive oil and roast them separately a day or two ahead of dinner. Figure an hour at 350°F. Then chop up the edible parts to add to the stuffing or the Sherry Reduction Gravy.
The stuffing is so simple and delicious. And easy to make vegetarian: Instead of the livers, substitute 1 3/4 cups drained cooked or canned cannellini beans (one 15-ounce can).
