1pound puff pastry dough, homemade or store-bought, chilled
1 8–ounce wheel Brie
1 egg
Instructions
Heat the oven to 400°F. Lightly dust a work surface with flour; roll out the pastry until it’s about 12 inches square and less than 1/4 inch thick. Sprinkle with more flour as needed.
Place the wheel of cheese in the center of the dough. If you’d like to add any toppings (see the list that follows), place them on the top of the cheese, right in the center. Fold opposite dough corners over the cheese, pinching them together in the center to seal. Transfer the package, seam side down, to a rimmed baking sheet.
Beat the egg with 2 tablespoons water and brush it all over the crust. Bake for about 45 minutes, until the crust is puffed and dark golden brown. To serve, put the package on a large wooden board or platter and slice into it while still hot so the cheese oozes out.
