Instructions
Heat the oven to 350°F. Melt 2 tablespoons butter in a large ovenproof pot over medium heat. Add the onion and cook, stirring often, until soft, 3 to 5 minutes. Add the rice and sprinkle with salt and pepper. Cook, stirring constantly, until the rice is glossy, about a minute.
Add 2 1/2 cups water, bring to a boil, then cover the pot and put it in the oven. Bake for 10 minutes undisturbed, then add the peas, cheese, remaining 2 tablespoons butter, and another 1⁄2 cup water (for a firmer mixture) or 3/4 cup water (if you like it a little soupier) and gently stir into the rice with a fork. Cover again and return to the oven until the rice is as tender as you like, another 5 to 10 minutes. Taste, adjust the seasoning, garnish, and serve.
