BBQ Ginger-Hoisin Baby Back Ribs Substitute five-spice powder for the paprika, 1/2 cup hoisin sauce for 1/2 cup of the ketchup, rice vinegar for the wine vinegar, and 2 tablespoons chopped fresh ginger for the garlic. Everything else stays the same.
BBQ Maple-Dijon Baby Back Ribs Replace 1/2 cup of the ketchup with 1/4 cup each Dijon mustard and maple syrup.
BBQ Tofu Use the seasonings and sauce in the main recipe or either of the first two variations to make this go-to plant-based barbecue main dish or snack. Instead of the ribs, use 2 bricks firm tofu (14 to 16 ounces each). Turn a brick onto one side so that the widest sides are perpendicular to the cutting board and cut the brick in half. Cut each half crosswise into planks about 1/2 inch thick. Repeat with the other brick. Grease the baking sheet with 2 tablespoons good-quality vegetable oil, arrange the tofu in a single layer, then rub the tops with a little more oil before rubbing in the spice mixture. Cook and sauce as directed.
