BBQ Tofu

Ingredients

  • 2 bricks firm tofu (14 to 16 ounces each)
  • Salt
  • 1 tablespoon sugar
  • 2 teaspoons ground cumin
  • Pepper
  • 5 teaspoons chili powder
  • 1 tablespoon smoked paprika
  • 2 cloves garlic
  • 1 cup ketchup
  • 1/4 cup red wine or water
  • 2 tablespoons red wine vinegar
  • 1 teaspoon soy sauce

Turn the broiler to high; put the rack 6 inches from the heat.

Combine 1 1/2 teaspoons salt, 1 tablespoon sugar, 2 teaspoons ground cumin, 1 teaspoon pepper, 2 teaspoons chili powder, and 1 tablespoon smoked paprika in a small bowl.

Turn the tofu bricks onto one side so that the widest sides are perpendicular to the cutting board and cut the bricks in half. Cut each half crosswise into planks about 1/2 inch thick.

Grease a baking sheet with 2 tablespoons good-quality vegetable oil, arrange the tofu in a single layer, then rub the tops with a little more oil before rubbing the spice mixture all over the tofu; place it on the baking sheet. Broil, turning once, until both sides are browned, 10 to 15 minutes.

Chop 2 cloves garlic; put them in a medium saucepan.

Add 1 cup ketchup to the saucepan along with 1/4 cup red wine or water, 2 tablespoons vinegar, 1 teaspoon soy sauce, 1 tablespoon chili powder, and a sprinkle of salt and pepper. Bring to a simmer and cook, stirring occasionally, while the tofu broils.

Set aside half the barbecue sauce in a small bowl for serving. When the tofu is browned on both sides, start basting with the sauce in the saucepan. Broil, turning a couple times, until the exterior is caramelized.
