Ingredients

  • 5 tablespoons (71 g) unsalted butter, plus more for serving
  • 1 large onion, finely chopped
  • 2 1/3 cups (600 g) boiled, drained, and cooled (or canned and drained) pinto or kidney beans
  • 2/3 cup (90 g) finely chopped ham, preferably dry-cured smoked (optional)
  • 2 teaspoons black pepper, or to taste
  • 1 1/2 teaspoons kosher salt
  • Imeretian khachapuri dough

Instructions

  1. In a medium skillet over medium heat, melt the butter. Add the onion and cook, stirring occasionally, and lowering the heat as needed to prevent scorching until soft and deep golden brown, about 25 minutes.
  2. Meanwhile, in a large bowl, coarsely mash the beans using a potato masher or your hands. Stir in the ham (if using), black pepper, and salt.
  3. Stir in the cooked onions.
  4. Divide the mixture in half. Using wetted hands, shape each portion into a ball. Wrap in plastic and refrigerate until ready to use (for up to 1 day).
  5. Shape, bake, brush, and serve the breads as described in steps 4 to 6 for khachapuri.
