Combing through my mostly old Pinterest page I stumbled upon this Colu Henry chicken. I almost didn’t make it because of the raisins (I do not like hot raisins) but felt like the green olives (Castelvetrano forever) might make up for them. Spoiler alert — the raisins and olives really do make the dish spectacular. I’ll definitely make this one again.
