Makes 4 servings 1x
1. Turn the broiler to high; put the rack 6 inches from the heat.
Melt 4 tablespoons butter in the microwave or in a small pot over medium-low heat.
Slice 8 ounces cheddar cheese or grate 2 cups.
2. Use the cheese and bread to fill and assemble 4 sandwiches. Brush the tops with about half of the butter. Or dab with a fork if you don’t have a brush.
3. Put the sandwiches on a rimmed baking sheet, butter side up, and broil until the tops are browned, 2 to 3 minutes. Carefully turn and brush or dab the other side with the remaining butter and return the pan to the broiler. Cook until the bread is toasted on this side and the cheese is melted, another couple minutes. Press down on the sandwiches with the back of a spatula if you like and serve right away.
