Buttermilk-Crusted Stovetop Burgers
Skip Step 1. In Step 3, when you’re ready to cook the burgers, put a large skillet or grill pan over medium heat. When it’s hot, put the patties in the pan, buttermilk powder side down. (Work in 2 batches if necessary to avoid overcrowding the pan.) From there, follow the cooking directions and cues in the main recipe, only leave the pan uncovered. If any extra buttermilk powder is darkening in the bottom of the pan, scrape it over to the side or remove it.
