Cheese Quesadillas

Ingredients

  • Good-quality vegetable oil for frying (optional)
  • 8 8-inch flour tortillas (to try making your own, see here)
  • 2 cups grated melting cheese like Asadero, cheddar, or Jack, or a combination
  • 1/2 cup chopped scallions
  • 1 or 2 chopped fresh jalapeño chiles (optional)
  • Salsa and/or sour cream, for serving

Instructions

  1. Heat the oven to 200°F and have a baking sheet or 2 handy. Put about 1 tablespoon oil, if you’re using it, in a medium skillet over medium heat. When it’s hot, put a tortilla in the skillet. Top with one-quarter of the cheese, scallions, and chiles if you’re using them, then with another tortilla.
  2. Cook, pressing with a spatula to help seal the tortilla, until the tortilla browns in places and the cheese begins to melt, 2 to 3 minutes. Carefully turn and cook the other side until the cheese is fully melted and both sides are toasted, another 2 to 3 minutes. Transfer to a baking sheet and keep warm in the oven while you repeat with the remaining ingredients. Cut into wedges and serve hot, passing the salsa and/or sour cream at the table.
