Chopped Salad with Real Ranch Dressing

Ingredients

Chopped Salad

  • 2 celery stalks (preferably from the heart), chopped
  • 2 carrots, chopped
  • 1 small to medium red onion, minced
  • 1 cucumber, peeled if you like, seeded, and chopped
  • 1 red or yellow bell pepper, cored, seeded, and chopped
  • 4 cups chopped romaine lettuce (about 1 pound)
  • Salt and pepper

Real Ranch Dressing – Makes 2 cups

  • 1 cup mayonnaise
  • 1 cup buttermilk
  • 1/4 cup buttermilk powder
  • Salt and pepper
  • 1/4 cup chopped fresh chives or parsley (optional)

Instructions

  1. Combine the celery, carrots, onion, cucumber, bell pepper, and lettuce in a bowl; sprinkle lightly with salt and pepper and toss.
  2. Toss with dressing. Taste and adjust the seasoning. Serve immediately.

Real Ranch Dressing

  1. Put the mayonnaise, buttermilk, and buttermilk powder in a medium jar with a tight-fitting lid. Sprinkle with a little salt and lots of pepper. Add the chives or parsley if you like, put on the lid, and shake vigorously for 30 seconds or so.
  2. Taste and adjust the seasoning. Use immediately or refrigerate for a few days. (It will keep longer if you don’t add the fresh herbs.)
