Creamed Onions

Ingredients

  • Salt and pepper
  • 6 onions (about 1 1/2 pounds), trimmed and peeled
  • 1 cup cream
  • 2 tablespoons butter
  • Pinch freshly grated nutmeg (optional)

Instructions

  1. Bring a large pot of water to a boil and salt it. Cut the onions crosswise into thick slices; there’s no need to separate them into rings. Plunge the onions into the boiling water and cook for about a minute; drain well.
  2. Put the cream and butter in a large skillet over medium heat. Add the onions and bring to a boil; cook, stirring occasionally, until the onions have absorbed a lot of the cream and the sauce is thick, about 5 minutes. Add a tiny bit of nutmeg if you like and sprinkle with pepper. Taste, adjust the seasoning, and serve hot.

Recipe variations

Creamed Spinach

Instead of the onions, use 1 1/2 pounds trimmed spinach. In Step 1, after draining the spinach, cool it a bit or shock, then squeeze dry and chop it. Proceed with the recipe.

Creamed Whole Scallions

Trim any roots and just a bit of the greens from 1 1/2 pounds scallions. Cook in Step 1 until tender and silky, about 5 minutes. Proceed with the recipe.
