Cumin-Rubbed Pork with Mangoes

  • 1 tablespoon ground cumin
  • Salt and pepper
  • 3 tablespoons good-quality vegetable oil
  • 1 pork tenderloin (1 to 1 1/2 pounds)
  • 2 mangoes
  • 1 small red onion
  • 1 small bunch fresh cilantro
  • 2 limes

Instructions

  1. Turn the broiler to high; put the rack 6 inches from the heat.
  2. Combine 1 tablespoon ground cumin with a sprinkle of salt and pepper in a small bowl.
  3. Drizzle 2 tablespoons vegetable oil all over the tenderloin and sprinkle with the spice mixture; rub to coat the meat all over. Put the tenderloin in a large broiler-proof skillet and broil, rolling it once in a while, until browned all over and slightly pink inside, 10 to 15 minutes. Nick with a small knife at the thickest part to check.
  4. Peel, pit, and chop the mangoes into 1/2-inch chunks.
    Trim, peel, and chop the onion.
    Chop 1/2 cup cilantro tender stems and leaves.
    Halve the limes.
  5. When the pork is done, transfer it to a cutting board and tent with foil.
  6. Carefully move the hot skillet to the stove, add 1 tablespoon vegetable oil, and turn the heat to medium-high. Add the mango and onion and sprinkle with salt and pepper. Cook, stirring once or twice, until they begin to soften, 3 to 5 minutes.
  7. Squeeze in the lime juice and add the accumulated meat juices from the cutting board to the salsa. Remove from the heat. Stir in the cilantro. Taste and adjust the seasoning.
  8. Slice the pork crosswise as thick as you’d like and serve with the salsa on the side.
