Fruit Candy

Ingredients

  • about 1 1/2 pounds fruit, like apple, pineapple, mango, banana, grapes, or strawberries
  • 1 tablespoon olive oil

Instructions

  1. Heat the oven to 225°F. Peel the fruit, if necessary, and if they are already small (like berries or grapes), cut them in half; otherwise, cut them into wedges, sticks, or cubes about 1⁄4 inch thick by 2 inches wide. grease two baking sheets with the olive oil, then spread the fruit on the prepared pans in a single layer.
  2. Cook the fruit until slightly shriveled, dehydrated, and sweet but still soft and chewy. You might have to move them or the pan around to ensure they don’t burn or get too crisp. start testing the fruit after about 2 hours, and remove it from the oven when it’s as chewy or crisp as you like, anywhere from another 1 to 1 1/2 hours depending on the fruit and how it was cut. Cool thoroughly before storing in an airtight container (they’ll keep in the fridge for a week).
