Ginger-Scallion Sauce

The amount of chopping required for this sauce is worth the effort, especially if you want fine bits. But I’ll let you in on a secret: you can put the ginger, scallions, and garlic in a food processor and pulse until they’re chopped, provided you don’t purée them.
