Grill-Braised Potatoes with Marjoram and Garlic

Ingredients

  • 1 1/2 pounds potatoes, cut into 1/4-inch-thick slices
  • 3 cloves garlic, sliced
  • 2 tablespoons good-quality olive oil
  • 1 tablespoon chopped fresh marjoram
  • Salt and pepper
  • 1 tablespoon vegetable broth or water

Instructions

1. Start the coals or heat a gas grill for medium direct cooking.

2. Put the potatoes, garlic, oil, marjoram, and salt and pepper to taste in a large bowl and toss to combine. Transfer to the center of a 12-inch piece of heavy duty foil and pour over the broth. Fold over the foil to cover, and crimp the sides shut; you don’t want any steam escaping from the packet.

3. Put the packet on the grill directly over the fire. Close the lid and cook until the potatoes are fork-tender, 20 to 30 minutes.

4. Transfer the packet to a platter; the potatoes will keep hot in it for at least 15 minutes. Be careful of the steam when you undo the foil; transfer to a dish and serve.
