Loaded Muesli

Ingredients

  • 1/2 cup raisins or chopped dried fruit
  • 3 cups rolled oats
  • 1 cup any roasted or raw nuts and/or seeds
  • 1/2 cup unsweetened shredded coconut
  • 1/2 teaspoon ground cinnamon Salt
  • Yogurt or milk for serving

Instructions

  1. Measure raisins or other dried fruit; if the pieces are big, take a few minutes to chop them into bits.
  2. Combine the fruit, rolled oats, nuts and/or seeds, coconut,  ground cinnamon, and a sprinkle of salt.
  3. Taste and adjust the seasoning. Serve with yogurt or milk, or store in sealed containers. (The main recipe and the variations will last in the pantry for weeks and the freezer for months.)

Recipe variations

Loaded Granola

Use raw nuts so they don’t overtoast, or add roasted nuts with the coconut. Put the oats and nuts in a large bowl and sprinkle with salt. Drizzle with 1/4 to 1/2 cup honey or maple syrup (to taste) and toss to combine. Spread the oat mixture on a rimmed baking sheet and bake at 350°F, stirring occasionally until lightly browned, about 30 minutes. Toss in the spice, then sprinkle the coconut on top and return to the oven until the granola is fragrant and the coconut is golden. Remove from the oven, stir in the fruit, and cool completely before storing.

Candied Ginger–Clove Muesli

The spice is nice. Substitute 1/2 cup chopped candied ginger for the raisins and ground cloves for the ground cinnamon.

Apricot-Cardamom Muesli

Use chopped dried apricots for the fruit and ground cardamom instead of ground cinnamon.
