Baked Pane Cotto
Another way to set the eggs is by baking them. After the toast comes out of the oven, lower the heat to 350°F. In Step 4, once the eggs are added to the skillet, sprinkle the cheese over all and pop the pan in the oven to cook until the eggs are set how you like them, 10 to 20 minutes. Then garnish with the herb and serve.
Baked Pane Cotto for a Crowd
The easiest ever. Double the bread and sauce ingredients and make both the bread and sauce components up to a day ahead if you like. Heat the oven to 350°F. Spread the mixture into a 9 by 13-inch baking dish, make the indentations, add the eggs, top with the cheese, and bake as above. (It will take 5 to 10 minutes longer if the dish goes into the oven cold.)
