Pasta With Delicata for One

Mark Bittman

PUBLISHED October 30, 2026

Delicata is unique: You can eat the skin and seeds, and, while I suppose that’s true of some other winter squashes, they’re not as common or as good. This dish – made by me this week, and every fall for as long as I can remember – demonstrates its value like few others. The seeds become fairly tender, the squash is silky-soft and flavorful, and – unlike many winter squash dishes – all the sweetness comes straight from the squash.
