Savory S’mores

Ingredients

  • 1 baguette, sliced on an angle into 1/2-inch slices
  • Extra-virgin olive oil, for drizzling
  • 1 to 1 1/4 pounds non-melty cheese, such as Halloumi, kasseri, or kefalograviera, cut into 3/4-inch-thick slices
  • 1 to 1 1/2 pounds sausage, such as kielbasa, andouille, chorizo, or plant-based sausage, cut into 3/4-inch-thick slices
  • Pickled sweet peppers, such as piquillo or red pepperazzi
  • Pickled spicy peppers, such as pepperoncini
  • Sun-dried tomatoes in oil
  • 2 ripe but firm pears, such as Bosc or Bartlett, sliced
  • 2 apples, such as Pink Lady, Granny Smith, or Honeycrisp, sliced
  • 8 ounces triple-crème cheese, such as Saint-Andre Honey Mustard, such as Dijon, grainy, or brown

Special equipment:

  • Large wood or metal s’mores skewers

Instructions

  1. Go outside and get the firepit started. Return inside and preheat the oven to 350°F.
  2. Place the baguette on a baking sheet and drizzle lightly all over with olive oil. Bake for 9 to 11 minutes, until lightly toasted but still a bit chewy.
  3. Meanwhile, arrange the non-melty cheese, sausages, pickled sweet and spicy peppers, sun-dried tomatoes, pears, apples, triple-crème cheese, honey, and mustard in small bowls and plates on a large serving tray.
  4. Add the toasted baguette slices to the serving tray in a pile and bring the food outside to serve your guests, along with a stack of smaller plates for them to eat from.
  5. To construct a savory s’more, place two baguette slices on a plate and top one slice with a combination of any of the following ingredients: sweet peppers, spicy peppers, sun-dried tomatoes, pears, apple slices, triple-crème cheese, honey, or mustard.
  6. Place a slice of sausage or cheese on the end of a skewer and hold over the fire, making sure not to hold it too close to the flame. Gently turn the skewer a few times to ensure even cooking. Cook the sausage or cheese until golden brown in parts and heated through, 3 to 4 minutes. Carefully remove the sausage or cheese from the skewer and place on top of the baguette with the fillings.
  7. Place the other baguette slice on top and eat it like a mini sandwich. Enjoy immediately.
