Shaved Cauliflower and Celery Slaw

Makes 4 servings 1x

Time 30 minutes



  • 1/2 head purple cauliflower, 1/2 head orange cauliflower (the colors are for fun and not at all critical, you can also use white)
  • 4 large celery stalks
  • 4 ounces creme fraiche
  • 3 ounces dijon mustard
  • 1 tablespoon maple syrup
  • A few big splashes of champagne vinegar
  • Salt and black pepper, to taste
  • 2 handfuls of hazelnuts
  • 1 pile of fresh chopped chives


Break cauliflowers down into large florets, then slice as thinly as possible (they should look like flat little trees). Slice celery stalks on a bias into similarly thin pieces. Make dressing by stirring together creme fraiche, dijon mustard, maple syrup, and champagne vinegar until the consistency is just slightly runny. Season with salt and pepper to taste and add more vinegar if necessary. Generously dress the vegetables and store in the fridge until ready to serve. Toast and chop hazelnuts and chop fresh chives. Top the salad with both.
