Time about an hour, largely unattended
1. Heat the oven to 375°F. Cut across the squashes to trim away the stem. Carefully cut each in half and scoop out the seeds and surrounding pulp with a spoon. With the flat side facing down, cut the squashes in either direction, making slices about 1/4 inch thick.
2. Smear the olive oil into the bottom and sides of a 9- x 13-inch baking dish (or a large oval dish). Layer the sliced squash into the dish, sprinkling with salt and pepper as you go. Cover tightly with foil and bake undisturbed for 45 minutes.
3. Remove the dish from the oven and turn the heat to 400°F. Take off the foil and dot the top of the squash with the bits of butter. Return the squash to the oven and bake until the squash is super soft and shriveled and browned in places, 15 to 20 minutes. Serve hot or at room temperature.
