Smoked Tofu with Soy Sauce Ranch

Ingredients

  • 1 or 2 blocks firm or extra-firm tofu (14 to 16 ounces each)
  • Good-quality vegetable oil for brushing
  • Salt and pepper
  • Soy Sauce Ranch

Instructions

1. Start the coals or heat a gas grill for medium indirect cooking. If using a charcoal grill, position the coals so that the smoke will be pulled over the tofu and out the top vent.

2. Drain the tofu and pat dry with a paper towel. Slice across 1 inch or thinner. Brush the slices with oil to help the smoke stick, and sprinkle with salt and pepper on both sides.

3. When the grill is ready, add about 2 cups wood chips to the fire and close the lid. When the grill is full of smoke, put the tofu on the indirect side. Close the lid and cook until the surface has turned golden, 20 to 30 minutes (or darker and longer if you like more of a crust). Depending on how close the slices are to the fire, the edges might get browner and the slices may develop grill marks. Make sure the grill is full of smoke the entire time; you may need to add another cup of wood chips. When the tofu is ready it will release easily from the grates.

4. Serve, with Soy Sauce Ranch, or use in something else right away. Or let cool, cover, and refrigerate for up to 5 days.
